Heads and tails

Steam rises from freshly boiled crawfish as Jerry Caillouet, owner of Mandeville Seafood, serves them up Wednesday morning on McAlister Place. Caillouet and his team boiled 1,300 pounds of the local crustacean for Craw Dat, an annual event hosted by Tulane Dining Services. Once delivered to Bruff Commons, the crawfish are paired with the usual corn and potatoes, and presented in a variety of local dishes.
